I can!

I’m not a cook.  Nor have I ever professed to be one.  Not even a mediocre one.  I’ve ruined so many things, it’s ridiculous.  Some of my favorite ruined dinner stories are when I was first married and attempted to make chicken pot pie.  The funny thing about chicken pot pie is that if you don’t cook the potatoes before you add them to the rest of the pie, they will still be raw when it’s done cooking.  Therefore, James and I have affectionately dubbed that moment in time as the time I tried to make “apple pot pie”, since the potatoes were pretty much like raw, crunchy apples.  The second major fail was the time I tried to make calzones with chicken inside of them.  Also, the funny thing about calzones is kind of similar to the funny thing about pot pie.  You sort of need to cook the raw ingredients before you put them into the middle of something.  Ever tried raw chicken calzones?  Those aren’t the only two flops, believe me.  Thankfully, I have a gracious husband who will eat anything, even if it’s not top notch (though, no worries . . . he didn’t eat the raw chicken calzones.

Yesterday though, I made a meal that he called a slam dunk, which was so nice for me to hear, since I’m not ever in the running for chef of the year.  It made me happy knowing that I was making his belly happy.  Thank goodness for easy recipes!  And so now, you too must try the meal.  Here’s what I made: Creamy Tortellini Soup.  Super yummy.  I added ground sausage.  And I used 16 oz of tortellini instead of 9 oz.  I also made the meal ahead of time, put the frozen tortellini in the soup and then stuck it all in the crockpot on low for about an hour and a half before we ate it.

I think that may be the first time in five and a half years that I have had this blog that I’ve shared a recipe.  There’s a first for everything 🙂

And because posts are boring with no photos, here are a few of my little love. . . 4 1/2 months already!
